SHORTCRUST PASTRY RECIPE FOR CELIACS

Ingredients

  • 150 grams of corn flour
  • 210 g of rice flour
  • 150 g butter
  • 150 grams of powdered sugar
  • 5 egg yolks
  • 4 g of baking powder

Preparation

  • Place the cold butter cut into pieces and the corn flour in a blender, blend for a few seconds and then place the resulting mixture on a work surface together with the sifted rice flour and icing sugar.
  • Also add the yeast, create a fountain shape and then pour in the egg yolks. Work the mixture until it forms a compact dough.
  • Once ready, wrap the dough in plastic wrap and refrigerate for at least an hour. After this time, you can use the shortcrust pastry to make the tart.
  • Get a tart pan, brush the bottom with butter and flour it. Roll out the dough on a floured surface and roll out the dough using a rolling pin.
  • Create a disk and set aside a portion of the shortcrust pastry which you will later use to make the tart covering strips.
  • Place the shortcrust pastry in the cake pan, remove the excess dough and prick the bottom with a fork.
  • Pour in your favorite jam, even better if homemade, and level it with a spoon.
  • Roll out the dough shortcrust remaining and cut out the classic strips, place them on the tart crisscrossing them and then bake in the oven at a temperature of around 180 degrees for at least 45-50 minutes.
