FRIED RADICCHIO RECIPE
Radicchio is a typical winter vegetable but there is a type, called tardivo, which is found at the beginning of spring. The peculiarity of late radicchio is its distinctive bitter aftertaste.Winter radicchio, on the other hand, has a more delicate flavor. We thought we'd propose a recipe based on radicchio, ideal as a second course or as a tasty appetizer, which requires a delicious variation in cooking that will make this vegetable appetizing.

INGREDIENTS (for 4 people)
- 4 heads of chicory late Treviso
- 3 heaped tablespoons of durum wheat flour
- 2 glasses of beer
- Oil to taste
Preparation
- At least an hour before frying the radicchio, prepare a batter with the flour, beer, and two teaspoons of salt, stirring quickly with a fork to avoid lumps.
- Choose heads of radicchio that are not long but pulpy, cut them into slices or wedges lengthwise and wash them carefully.
- Dip the radicchio slices in the batter, heat the oil in a pan, remove the radicchio from the batter one by one and fry until golden brown.
- Serve as soon as ready, piping hot.
