FRIED MUSHROOMS RECIPE

FRIED MUSHROOMS
INGREDIENTS
- 500g of porcini or champignon mushrooms
- 1 egg
- 1 tablespoon of milk
- 1 tuft of parsley fresh
- 150g of breadcrumbs, preferably wholemeal
- Salt and black pepper
- Seed oil for frying
FRIED PORCINI MUSHROOMS
- Clean the mushrooms leaving only a centimetre of stem and brush them to remove all traces of soil.
- Slice them half a centimeter thick.
- Beat the egg with the milk and pepper, better if freshly ground because it is more fragrant.
- Chop with a knife or with a mezzaluna parsley after washing it under running water and dabbing it with a clean cloth.
- Mix in a plate the parsley and breadcrumbs.
- Pass the mushrooms one by one first in the egg and then in the breadcrumbs, pressing well from all sides to make the breading stick.
- Heat plenty of seed oil in a small pan.
- When is it very hot (Try throwing a crumb of breadcrumb mixture in there: it will have to come up quickly for the temperature to be right) dip the mushroom slices in it.
- When the mushrooms are golden, remove them with a slotted spoon.
- Place them on kitchen paper to dab off excess grease.
- Salads on the surface and serve immediately.
- Serve the fried mushrooms while they are still hot: they are suitable as appetizer with a glass of white wine, also to be served in a buffet lines standing perhaps threading each mushroom onto a long skewer. But I can constitute a second dish and why not even the whole dinner, if you accompany them with raw and cooked vegetables and some good rustic bread.
