You've probably had leftover tomatoes of various types in your refrigerator, too few to make a nice salad or any other dish. Here's the perfect recipe to use them without wasting them, transforming them into an excellent fresh tomato sauce.
The mixed fresh tomato sauce is made simply by adding fresh tomatoes to the vegetables garlic, extra virgin olive oil, and salt. It's cooked for a quarter of an hour so the tomatoes remain firm. Once ready, you can choose whether to eat it immediately or freeze it and use it later, adding aromatic herbs like basil. chive, parsley or spices like turmeric, ginger and curry. The quantities indicated in the recipe are indicative: it all depends on how many tomatoes you have available. Keep in mind that for one kilogram of tomatoes you need six cloves of garlic and four tablespoons of extra virgin olive oil. Alternatively, you can substitute any other type of salt, even traditional salt, but don't overdo it.

- 3 copper tomatoes
- 4 ripe San Marzano or pear tomatoes
- 20 cherry tomatoes
- Purple salt to taste
- 6 cloves of garlic
- extra virgin olive oil
- basil to taste
Preparation
- Prepare all the ingredients.
- Wash all the tomatoes and cut the red ones into wedges.


- Peel the cloves of garlic and place them in a saucepan with high edges together with 4 tablespoons of extra virgin olive oil.
- Brown them over a low heat, put all the tomatoes in the saucepan and sprinkle with purple salt.
- Stir, lower the heat, cover the pan and cook for 10/15 minutes, stirring often.
- Finally, turn off the heat, let it cool, and then use the mixed fresh tomato sauce as you like. Enjoy!
And once ready, use the fresh sauce to make homemade pizza.
