Farfalle with anchovies in white wine

Add the cherry tomatoes. Drain the pasta al dente.

In less than half an hour and without much difficulty, you can bring a truly special first course to the table with this recipe: butterflies with the anchovies.

Ingredients 4 people to

  • 350 g. of farfalle
  • 1/2 kilo of fresh anchovies
  • 100 g pitted black olives
  • 1 clove of garlic
  • 1/2 glass of brandy or white wine
  • about 150 g of cherry tomatoes
  • Origan
  • oil
  • Chili pepper
  • salt and pepper to taste

Preparation

  • Clean the anchovies and spinach.
  • Cook the pasta in plenty of salted water and in the meantime, in a large pan, add the oil and brown the garlic and chili pepper.
  • Then add the olives, and cook them for about 2 minutes, the cherry tomatoes and the brandy or wine.
  • Continue cooking and just before draining the pasta add the tomatoes to the anchovies and cook them over high heat for about 3 minutes.
  • Drain the pasta al dente and sauté it in the pan with the sauce and Origan.
