In less than half an hour and without much difficulty, you can bring a truly special first course to the table with this recipe: butterflies with the anchovies.
Ingredients 4 people to
- 350 g. of farfalle
- 1/2 kilo of fresh anchovies
- 100 g pitted black olives
- 1 clove of garlic
- 1/2 glass of brandy or white wine
- about 150 g of cherry tomatoes
- Origan
- oil
- Chili pepper
- salt and pepper to taste
Preparation
- Clean the anchovies and spinach.
- Cook the pasta in plenty of salted water and in the meantime, in a large pan, add the oil and brown the garlic and chili pepper.
- Then add the olives, and cook them for about 2 minutes, the cherry tomatoes and the brandy or wine.
- Continue cooking and just before draining the pasta add the tomatoes to the anchovies and cook them over high heat for about 3 minutes.
- Drain the pasta al dente and sauté it in the pan with the sauce and Origan.
