How to prepare eggplant croquettes

Ingredients
- 2 eggplant striated
- 1 tablespoon of raisins
- 1 tablespoon of chopped olives
- 1 tablespoon flaked almonds
- 2 tablespoons of almond flour
- 1 tablespoon of desalted capers
- 1 pinch of salt
- 2 tablespoons of cornstarch and flour for breading

Preparation

- Helping you with a spoon, give the shape of the croquettes and pass them in the corn flour.
- At this point you have two options: the healthiest one is to cook them in the oven at 180 degrees for 20 minutes, or sauté them in a pan with oil.
- Before plating them, place them on a sheet of kitchen paper to absorb the excess oil.
- Serve them with a cherry tomato salad with chopped parsley and basil.
