How to make fig jam

Fig jam is undoubtedly one of the tastiest, and is ideal for filling cakes and tarts and for accompanying bread and aged cheeses. And not only that: enjoy it with homemade rusks , a true delicacy.

To make it, in addition to the figs, you'll need sugar and a lemon, using both the juice and grated zest. Choose an organic lemon, preferably one grown in your own garden. Before you begin, taste one of the figs: if it's already very sweet, reduce the sugar, otherwise you risk getting a glaze. Remember, fig jam should be flavorful yet delicate.

Here is the recipe to prepare this delicious preserve:

Ingredients

  • 2 kg of figs
  • 500 grams of sugar
  • the juice of 2 lemons

Preparation

  • Peel the figs, cut them into quarters, and let them marinate with the lemon juice and grated peel for about 45 minutes. Place everything in a large, tall, nonstick pot and cook for about 10 minutes.
  • Pass everything through a food mill to remove the seeds. Put it back on the heat and add the sugar.
  • Cook over low heat for another 45 minutes, stirring occasionally to prevent the sugar from settling on the bottom and the figs from falling apart.
  • While cooking, prepare the jars by washing them and sterilizing them in boiling water for 30 minutes, including the lids. It doesn't matter if the containers are new; this step should always be done to ensure proper hygiene and to preserve the flavor of the jar. jamAs soon as the jam becomes grainy but not too liquid, turn off the heat.
  • To check if the consistency is right, pour a teaspoon of jam onto a saucer and let it cool: if it solidifies a little, then the mixture is ready to be put into jars, otherwise continue cooking.
  • When filling the jars, stop 2-3 cm from the edge, close with the lid and turn upside down to cool.
  • Store the jam in a cool, dark place and then, once opened, enjoy it as you like, considering that the jar should be refrigerated and consumed within 15 days at most.

If you're looking for a spicier flavor to contrast with the sweetness of the fig, add a few cinnamon sticks or black peppercorns while you're soaking them in the lemon juice. Alternatively, try chopped almonds: this will give your homemade jam a more personal touch.
