Ingredients
- 250 grams of type 0 wheat flour
- 150 grams of white corn flour
- 1 sachet of natural yeast powder
- 3 tablespoons sesame oil
- An egg
- A spoonful of fennel seeds
- A pinch of cinnamon
- A pinch of cumin (you can also use the two spices in powder form)
- Water and salt (as needed)
Preparation
- Lightly toast the cumin and cinnamon and then crush them in a mortar, alternatively use them in powder form.
- Pour the two flours into a bowl and then add the baking powder, cumin, cinnamon and a pinch of salt.
- Mix everything together and then add the egg and sesame oil.
- Start kneading everything together, adding water as needed, until you obtain a fairly soft dough.
- Let the mixture rest for about half an hour.
- After this time, roll out the dough with a rolling pin and then, as in the case of rice cakes, cut out circular biscuits and sprinkle them with fennel seeds.
- Finally, cook in a preheated oven at 180°C for about 20 minutes.
