How to prepare corn cakes

Ingredients

  • 250 grams of type 0 wheat flour
  • 150 grams of white corn flour
  • 1 sachet of natural yeast powder
  • 3 tablespoons sesame oil
  • An egg
  • A spoonful of fennel seeds
  • A pinch of cinnamon
  • A pinch of cumin (you can also use the two spices in powder form)
  • Water and salt (as needed)

Preparation

  • Lightly toast the cumin and cinnamon and then crush them in a mortar, alternatively use them in powder form.
  • Pour the two flours into a bowl and then add the baking powder, cumin, cinnamon and a pinch of salt.
  • Mix everything together and then add the egg and sesame oil.
  • Start kneading everything together, adding water as needed, until you obtain a fairly soft dough.
  • Let the mixture rest for about half an hour.
  • After this time, roll out the dough with a rolling pin and then, as in the case of rice cakes, cut out circular biscuits and sprinkle them with fennel seeds.
  • Finally, cook in a preheated oven at 180°C for about 20 minutes.
