How to make medlar liqueur

The preparation must be filtered and left to rest for at least a month. An excellent digestive.

Loquat liqueur, also known as “nespolino,” is not made with the pulp, but with the seeds, and is an excellent digestive.

Ingredients

  • 250 g of medlar seeds
  • 1/2 liter of water
  • 1/2 liter of 90° alcohol
  • 500 gr of brown sugar

Preparation

  • The seeds must be dried for two days, to be able to remove the brown skin that covers them.
  • The sugar must be dissolved in boiling water and cooled.
  • The sugar and water mixture is then placed in an airtight jar, along with the roughly crushed seeds and the alcohol.
  • The liqueur must rest for a month and be shaken once a day.
  • It should then be filtered and left to rest for another month before being consumed.
