Loquat liqueur, also known as “nespolino,” is not made with the pulp, but with the seeds, and is an excellent digestive.
Ingredients
- 250 g of medlar seeds
- 1/2 liter of water
- 1/2 liter of 90° alcohol
- 500 gr of brown sugar
Preparation
- The seeds must be dried for two days, to be able to remove the brown skin that covers them.
- The sugar must be dissolved in boiling water and cooled.
- The sugar and water mixture is then placed in an airtight jar, along with the roughly crushed seeds and the alcohol.
- The liqueur must rest for a month and be shaken once a day.
- It should then be filtered and left to rest for another month before being consumed.
