How to make a chocolate Easter egg

First, you'll need two half-moulds for Easter eggs: they're easily found in supermarkets and kitchenware stores. If you're just starting out, choose the clear plastic ones, which will allow you to easily separate the two halves. Bring a pair of latex gloves to avoid leaving fingerprints on the chocolate, and a candy thermometer : this is essential during the preparation process to ensure the chocolate does n't drop too low. Don't forget the pans for the double boiler, the ladles, the piping bags for the decorations, and of course the chocolate: you'll need about 500 grams. White, milk, or dark chocolate is your choice, depending on your tastes or those of the person you're gifting it to.

Preparation

Here's the step-by-step process for making your own Easter egg:

  • Melt the chocolate in a bain-marie, bringing it to a temperature of 45 degrees, and once melted, pour it into the molds, making sure they are perfectly dry and clean: any trace of moisture or grease will ruin your work and take away the shine from the chocolate.
  • Once the chocolate has been poured evenly into both molds, swirl them so that the chocolate adheres well to the entire surface, then let them cool. After about 30 minutes, the eggs should separate on their own. If they don't, apply light pressure to the molds.
