Cold pasta with stale bread and Tropea onions

A fresh and wholesome dish you can even take to the office for lunch. It's ready in less than half an hour.

How to prepare cold pasta

An easy-to-prepare dish, and very convenient to use: you can serve it for lunch or dinner, and consider it as a first or second course. We're talking about the cold pasta, particularly recommended in the summer months (also to avoid too many complications in the kitchen), with some touches to give a very particular flavour to the dish. For example: the apples, onions (the best are always those from Tropea), curry.

Ingredients

  • 2 Pink Lady apples
  • 1 Tropea onion
  • 40 g of Goji berries
  • 300 g of short pasta
  • 1 stale rye roll
  • 2 teaspoons curry powder
  • Salt and pepper
  • Extra virgin olive oil

Preparation

  • Wash the apples, remove the core but keep the peel. Cut them into slices and then into very small cubes.
  • Peel the onion and slice it very thinly. Place it in a large pan with the apples, 2 pinches of salt, 1 pinch of pepper, and 2 tablespoons of oil.
  • Place on the stove and sauté over high heat for 10 minutes. Transfer to a plate, add the goji berries, and let cool.
  • Chop the bread together with the curry, a pinch of salt and a pinch of pepper to obtain tasty crumbs.
  • Place the crumbs in the pan used for the apples without adding any seasoning and toast them for 5 minutes (breadcrumbs). Cook the pasta and drain it al dente.
  • Cool it immediately under running water to stop the cooking and pour it into a bowl with the apple and onion dressing. Season with salt, pepper, and oil.
  • Divide the pasta between plates or individual bowls for an outdoor lunch, top with a spoonful of curry breadcrumbs and serve.
