How to prepare cod with tomato sauce
Neapolitan cuisine showcases cod and stockfish to their fullest. It uses this healthy, nutritious, and flavorful fish in a variety of ways. Among these, the most delicious is the recipe for cod with tomato sauce . Very easy to prepare.
Ingredients
- 800 g of soaked cod or stockfish
- 500 g of ripe tomatoes
- 2 cloves of garlic
- 1 onion
- 100 g of Gaeta black olives
- 50 g of desalted capers
- 1 sprig of chopped parsley
- Salt, oil
- Anchovies in oil, raisins, pine nuts
- White wine (optional)
Preparation
- Heat up a little oil in a pan, chop thegarlic and the onion and brown them.
- Add Add the pitted olives and desalted capers, and, if desired, a fillet or two of anchovies in oil. Cook over low heat to flavor while the anchovies dissolve. If you want to stick to traditional methods, you can add a tablespoon of soaked raisins and a tablespoon of pine nuts to the sauce. At this point, I pour in half a glass of dry white wine and let it evaporate before adding the sliced tomatoes.
- Cover Fill the pan three-quarters full and let it cook. Instead of ripe tomatoes, you can use peeled tomatoes, pre-cooked pulp, or even passata.
- Cut Cut the raw fish fillets into 3/4-centimeter pieces, removing the center bone and as many bones as possible, but leaving the skin on. When the sauce is halfway cooked, and still quite dry, arrange the fish pieces in the pan, cover with the sauce, close the lid, and cook for about 15 minutes over medium-low heat. If the sauce becomes too dry, add a few spoonfuls of hot water.
- With the heat off, sprinkle Sprinkle chopped parsley over the fish. Stockfish requires a little longer cooking time. If you have any leftover sauce, you can use it to season spaghetti or linguine.
