CIRFOOD: less food waste in canteens
thanks to the use of artificial intelligence
CIRFOOD It is a giant in the restaurant industry. At various levels: for the school canteen services, hospitals e offices publicFor businesses, and for welfare in general. A large cooperative, centered in Reggio Emilia, with 12.000 employees who serve customers in 17 regions and 74 provinces in Italy and in European countries such as Belgium and the Netherlands.
CIRFOOD has started a very important project for the reduction of food waste, which in this sector account for almost a third of the production, using theartificial intelligence.
CIRFOOD REDUCES FOOD WASTE WITH ARTIFICIAL INTELLIGENCE
The starting point of the CIRFOOD project is to be able to match the demand, from the supplier, with the supply, from the consumers, without causing waste which then also means waste disposal costs.
Everything is upstream in the supply process, that is, before the meals are ordered through the Quota Stock and Go platform in Reggio Emilia. And this is where theartificial intelligenceWhich, with its algorithms, plans both supplies and storage. In two phases.

The first one foresees the market demand in the month following the survey, so that the quantity of food required for the operation of the canteens managed by CIRFOOD is clear. In the second phase, however, the algorithm suggests when to place orders based on actual needs in the various terminals of the restaurant giant.
In this way, waste is reduced, supplies are calibrated based on real needs and even food storage, with its associated costs, is more rational.
In the first year of activity the project has translated into a reduction of food waste by around 15 percent. Not only. CIRFOOD It also optimized transportation costs by providing full load trips only, and thus also reducing emissions. A model that, if it were applied on a large scale throughout Italy, It could provide great advantages over the scandalous waste of food that occurs every day, for example, in school and hospital canteens.
