MUD CAKE RECIPE
La Mud cake It's a dessert of American origin and literally means "mud cake." Its texture and dark color are reminiscent of the muddy banks of the river from which it takes its name. Moist on the inside, incredibly soft, and made with lots of dark chocolate, it's a delicious treat to bring to the table for any occasion. Excellent for breakfast with freshly squeezed orange juice or as a snack with a cup of hot tea, mud cake is the ideal dessert for any time of day.

MUD CAKE: ORIGINAL RECIPE

Ingredients
- 200 gr chocolate fondant
- 200 grams of sugar
- 250 gr of milk
- 160 g butter
- 200 grams of flour
- 1 packet of yeast
- 50 gr of bitter cocoa powder
- 2 eggs

INGREDIENTS FOR THE ICING
- 250 grams of cream
- 250 grams of dark chocolate
Preparation
- In a small saucepan, melt the chocolate with the butter, sugar, and milk. Pour into a bowl and add the flour and cocoa, mixing until the mixture forms a soft, thick dough.
- Preheat the oven to 180°.
- Add the eggs, one at a time, until fully incorporated. Add the yeast, stirring constantly. Line a deep baking pan with parchment paper and bake for an hour.
- After this time, perform the toothpick test by inserting a toothpick into several spots on the cake. If it comes out clean, the cake is done; otherwise, continue baking for another 15 minutes.
- As soon as you take the cake out of the oven, turn it upside down onto a wire rack and let it cool.
- At this point prepare the icing: chop the dark chocolate, heat the liquid cream in a saucepan, before it reaches boiling point turn off the heat and pour in the chocolate chopped dark chocolate, mix until you obtain a thick, smooth and homogeneous mixture that you will then spread on the cake.
- Let it cool and serve.
