But chocolate mousse is also a dessert that, thanks to its characteristics, can be very healthy and very waste-free: for example, it pairs perfectly with fresh seasonal fruit, and actually helps you eat it with greater pleasure and a bigger appetite. Here's the simplest and most effective recipe for your DIY kitchen, with a unique combination of chocolate and citrus.

INGREDIENTS (for four people)

  • 100g dark chocolate (minimum 80% cocoa)
  • 3 very fresh eggs
  • 1 knob of butter
  • 1 teaspoon of ground cinnamon
  • The grated zest of ½ orange
  • 1 tablespoon powdered brown sugar
  • A pinch of Himalayan salt
  • 1 pear or 1 peach
  • A touch of ginger
  • A vanilla pod

Preparation

Break the chocolate into pieces and cut the butter into small pieces. Melt them in a bain-marie, stirring until creamy. Let them cool slightly, then add the egg yolks, orange zest, cinnamon, and ginger.

Beat the egg whites mixed with the icing sugar and salt until stiff and then fold them into the mixture.

Transfer the mixture into four cups and let it cool in the refrigerator.

Serve by decorating the chocolate mousse with a fruit of your choice, peeled and sliced.
