Ingredients

(for about 40-50 biscuits)

  • 500 00 grams of flour
  • 120 gr of chocolate chips
  • 2 medium eggs
  • 180 grams of sugar
  • 180 g butter
  • 3 g of bicarbonate

Preparation

  • Before starting the preparation of the cookies, keep the chocolate chips in the refrigerator: a little trick to prevent them from melting during baking.
  • Place the diced butter and sugar in a stand mixer fitted with a whisk attachment and begin kneading. Add the eggs, then replace the whisk attachment with a paddle attachment and pour in the flour.
  • Turn on the leaf to mix the different ingredients, also add the bicarbonate, mix again and finally add the chocolate chips.
  • Pour the dough onto a floured surface, shape it into a loaf, wrap it in plastic wrap, and refrigerate for at least half an hour. After this time, take the dough and divide it into loaves.
  • Cut out 40-50 small balls, depending on the size you want the cookies to be, and then flatten them into round shapes. Alternatively, use cookie cutters to shape the cookies as you like.
  • Place the biscuits on a baking sheet lined with baking paper and refrigerate for another half hour.
  • Bake at 180°C for 20 minutes. Store the cookies in an airtight container for about a week.
