How to make minestrone soup with chickpeas, ginger, and vegetables
Vegetable minestrone is always a great way to eat healthy. But try to let your imagination run wild to make this dish more appetizing and adapt it with different variations. Ingredients
- 200g of couscous
- 300 ml of hot vegetable broth
- 2 potatoes, 2 carrots, 2 courgettes, 1 aubergine, 1 celery stalk, 1 onion
- 300 g of boiled chickpeas
- 300 ml of tomato sauce
- A small piece of ginger, finely sliced
- Half a teaspoon of paprika
- 1 teaspoon sugar, coriander and parsley
- Extra virgin olive oil and salt
Preparation
- Put the couscous and the broth in a bowl and cover with cling film.
- Set aside for 20 minutes, to allow the liquid to be completely absorbed.
- With a fork move the couscous and separate the grains.
- Cleanse the vegetables and chop them roughly.
- Heat a saucepan Add the onions, paprika, and ginger to 2 tablespoons of oil. Cook for 10 minutes until they begin to soften.
- Add the vegetables and chickpeas, mix to flavor and pour in the tomato puree and sugar.
