SOUP DI POLLO CON POTATO E LEEK

A simple soup, prepared with genuine ingredients and rich in nutrients. It's a truly unique dish. Here's a summary of the recipe. soup of chicken, potatoes and leeks, which is very simple to make. And for an even tastier version, try it with coconut milk.

Ingredients

  • 1 leek
  • 2 potatoes
  • A spoonful of oil
  • A knob of butter
  • Less than a litre of boiling water
  • A foglia di alloro
  • A clove
  • 2 whole chicken breasts (about 400g)
  • Salt and pepper
  • Toast

Preparation

  • Remove almost all the green part of a large leek, then divide it in two lengthwise, without separating the two halves. And rinse.
  • Peel the two Potatoes, and wash them. Heat a tablespoon of oil and a good knob of butter in a saucepan, add the leek and sauté gently, without letting it brown.
  • When it becomes transparent, add the potatoes passed through the grater with coarse holes and let them flavour, stirring before adding a litre of boiling water, the salt, a bay leaf and a clove.
  • Once it starts boiling againAdd 2 whole chicken breasts (about 400 g). Cover and cook over low heat for about 45 minutes. Once cooked, remove the chicken breasts, cut them into fillets, and return them to the pan.
  • Serve the soup very hot, bringing the pepper grinder and some toasted bread sticks to the table
