Whole wheat biscuits: but it's not true

They're actually made with refined flours. The same goes for snacks, breadsticks, and crackers. How to protect yourself from the tricks allowed by an overly flexible law.

Wholemeal sugar-free biscuit recipe

I wholemeal baked goods They're the only ones in the food sector that don't experience downturns. Their sales are constantly increasing, and this is due to the "health rush": consumers, with this acronym, are convinced they're buying something lower in fat, which in fact makes them appear to be a healthy, dietary food. But very often, this isn't true.

Starting with whole-wheat biscuits, but the same goes for snacks, crackers, breadsticks, and bread, many products are actually made with refined flours, reconstituted with the addition of small amounts of bran and bran middlings. This is permitted by law, which is very generous and broad regarding the definition of "whole-wheat products," which can contain as little as 1 percent of truly whole-wheat flour. This type of reconstituted flour also has counterproductive health effects: it has a higher glycemic index than regular flour, and during processing, wheat germ, which contains vitamins and minerals, is eliminated. In July 2023, the magazine Il Salvagente conducted a review of 82 products labeled as "whole-wheat" and sold in seven supermarket chains (Crai, Carrefour, Conad, Lidl, Ipertriscount, Eurospin, and Coop). In most cases, it has been discovered that these products actually use reconstituted flours, that is, flours refined with the addition of bran and bran meal.

The only way to protect yourself from these tricks, which are very harmful to consumers, is to read labels carefully, without stopping at the first wording. And check whether whole wheat flour is truly the first ingredient in the product and what percentage it contains compared to the rest. This should also be easy to read, as the ingredients are listed in decreasing order of quantity, making it easy to spot the truth.
