Vegan Beetroot Burger Recipe

Ingredients

  • 150g of brown rice
  • 80g cooked beetroot
  • ½ onion
  • Lemon zest to taste
  • Parsley to taste
  • Salt to taste
  • Breadcrumbs to taste

Preparation

- Cook the rice well and then, using a blender, blend 1/3 of it together with the parsley and beetroot.

- Chop the onion separately and brown it in a pan.

- In a bowl, combine the onion and the rice, parsley, and beetroot mixture that you previously blended, and add a small amount of grated lemon zest. Season with salt.

- Shape the burgers, coat them in breadcrumbs, then place them on a baking tray lined with baking paper and bake in the oven at 180 degrees for about 15 minutes on each side.
