BANANA MOUSSE
A truly delicious and easy-to-make banana mousse. Here's the full recipe.
Ingredients
Mousse
- 6 ripe bananas
- lemon to taste
- 300 g of whipping cream
Crispy
- 75 g of butter
- 45 g of sugar
- teaspoon vanilla extract
- 1 yolk
- 15 g of powdered almond flour
- 125 g flour
- Salt to taste
- water to taste
- 1 spoon of bitter cocoa
Gelato
- 1 liter of milk
- 500 g of cream
- 500 g of sugar
- 12 yolks
- 4 eggs
- 2 teaspoons of ground cinnamon

Preparation
- In a saucepan, cook the ripe bananas with a little lemon and leave to cool.
- Add the whipping cream and blend.
- Mix all the brittle ingredients together; pour the mixture into a baking dish and bake at 185°C (350°F) for 25 minutes. Crumble until crumbled.
- Place all the cinnamon ice cream ingredients in the ice cream maker.
PRESENTATION
Plate by placing the banana mousse in the center, a spoonful of ice cream and the crumbled brittle.
