Asparagus Pizza: The Recipe for Not Wasting Vegetables

Got some leftover vegetables? You can add them to the asparagus to make your pizza richer and more nutritious. You can also add zucchini and peas. A touch of Emmental cheese.

ASPARAGUS PIZZA RECIPE

But pizza with asparagus is ideal in the Do Not Waste kitchen for another reason too. You have vegetables Do you have leftovers? Not sure how to use them? Now, with the recipe we're sharing, everything becomes simpler and clearer: you can use them to enrich and complete your homemade asparagus pizza.

Ingredients

  • 350g of spelt flour (or 175g of wholemeal flour and 175g of 00 flour)
  • 1 sachet of dry brewer's yeast
  • 190 ml of warm water
  • 1/2 teaspoon of sugar

INGREDIENTS FOR THE DRESSING

  • Asparagus (a bunch)
  • Green olives
  • Emmental
  • Extra virgin olive oil
  • Oregano
  • Basil
  • Sale
  • Pepe

Preparation

  • Dissolve the yeast in half a glass of warm water, pour it into the middle of the flour in a large bowl (or in a mixer), work the dough, incorporating the remaining water little by little and adding the sugar, salt and, towards the end, two tablespoons of oil.
  • Cover the dough with a cloth and let it rest for at least an hour.
  • Blanch the asparagus, sauté them for a few minutes in a pan with a drizzle of oil, season with salt and pepper and garnish with the aromatic herbs.
  • Dice the Emmental cheese and place it in a bowl. Preheat the oven to its highest setting, roll out the dough, pressing lightly all around to create a crust. Place it on a baking sheet (preferably a drip pan) lined with parchment paper.
  • Cook for about 15 minutes. Serve hot.

An advice

To make the pizza even tastier, also add courgettes, peas, agretti, chicory, and chard, arugula, pecorino, and cherry tomatoes. Garnish the pizza with asparagus tips, porcini mushrooms, and parmesan.
