How to prepare artichoke salad

THEartichoke salad It's a dish you can use at the table on different occasions: a tasty appetizer for dinner, a first course for a light lunch, a second course if you want to give up meat. Ingredients

  • 4 artichokes
  • 1 pomegranate
  • 1 lemon
  • 1 apple
  • 2 carrots
  • 150 g of valerian
  • 60 g of shelled walnuts
  • Extra virgin olive oil
  • Sale

Preparation

  • Slice the cleaned artichokes and drizzle with lemon juice. Remove the seeds from the pomegranate, blend half of the seeds, and strain them to form an emulsion with a few drops of lemon juice, 2 tablespoons of oil, and a pinch of salt.
  • Peel and slice the appleMix it with the artichokes and julienned carrots, add the lamb's lettuce, chopped walnuts, and pomegranate seeds. Drizzle with the emulsion and serve. Garnish the dish with Parmesan shavings.

The variant with lemon and pepper

A variation of the artichoke salad, even simpler than the previous recipe, requires only the use of lemon and pepper, with the quantities presented here.

Ingredients

  • 100 grams of artichokes
  • 8 grams of olive oil
  • Lemon juice
  • Fine salt
  • Pepe

Preparation

  • Cut the well-cleaned artichokes into thin slices.
  • Season with oil, pepper, salt and lemon juice.
  • Let it rest for 10 minutes before serving.
