APPLE SAUCE RECIPE
Applesauce is ideal for seasoning stewed beans, grilled vegetables, and roasts. It's incredibly easy to make, in less than half an hour, with apple peels, according to this ancient recipe from Giuliana Lomazzi's book Riciclare in cucina (Terra Nuova editions).
Ingredients
- 500g of organic apple peels
- 100/150 ml of vegetable broth
- 1 / 2 lemon
- 2 large shallots
- 2 tablespoon of extra virgin olive oil
- a pinch of cinnamon
- 1 clove
- 2 sage leaves
- 2 juniper berries

Preparation
Wash the peels and place them in a saucepan with the chopped lemon zest, broth, spices, juniper, and sage. Once boiling, lower the heat and cook.
Meanwhile , chop the shallots and place them in a small pan with the oil and water. Season lightly with salt and cook over medium heat, stirring constantly. Increase the heat and let the liquid evaporate. Combine the chopped shallots with the peels and puree with an immersion blender. Add the lemon juice and season with salt. Use the sauce to season stewed beans or grilled vegetables.
