Ingredients

  • 4 Stark Delicious apples
  • 180 grams of sugar
  • Cinnamon powder
  • 120 g butter
  • 250 g of white flour
  • 1 teaspoon of vanilla extract
  • 2 yolks
  • 100 g of shelled almonds
  • The zest of an untreated lemon
  • 40 g of apricot jelly

Preparation

  • WashPeel and core the apples. Then cut them into pieces and place them in a pan with 40g of sugar, a tablespoon of cinnamon, and 30g of butter.
  • Bake Cook the apples over low heat for about 15 minutes, stirring occasionally until softened. Then, combine the flour and vanilla and sift them together, forming a well on a pastry board.
  • Pour Place the egg yolks in the center and beat them with a fork. Add the blanched and finely chopped almonds, the grated lemon zest, the remaining sugar, and 70g of butter. Then, quickly work the mixture with your fingertips until it's combined but not compact.
  • Preheat Preheat oven to 180°C (350°F) and divide half the batter into six individual ramekins, each about 12 cm in diameter. Butter each ramekin, spread the apricot jam on each portion, and fill them with the apple mixture.
  • Cover with the remaining pasta, crumbling it and sprinkling it in an even layer. Bake for about 30 minutes.
  • Remove from the oven, let cool for 40 minutes and serve.
