It's incredibly rare to have leftover pizza , but it can happen: a great way to avoid wasting it is to reheat it the next day in the oven or on a pan. Alternatively, here's a truly unique and original recipe for giving leftover pizza a tasty new twist: the pizza sandwich.
RECIPE WITH LEFTOVER PIZZA
It is prepared using a round pizza left over from the previous day: pizza slices are also excellent as long as they are thin enough to be folded in half.
The choice of filling is yours, based on your tastes and depending on the ingredients you have available: an excellent opportunity to use up leftovers such as vegetables, cured meats, sweet and smoked stringy cheeses, foods in oil and so on.

PIZZA SANDWICH RECIPE
For the recipe we're sharing, we opted for a Margherita pizza, reheated in the oven for a few minutes. The topping includes a few anchovy fillets in oil, capers, and black olives. To enhance the pizza, we also used some grilled cherry tomatoes sprinkled with purple salt and black olives.
Serve the pizza sandwiches with a glass of cold beer: they are perfect for a simple but tasty DIY aperitif and as a second course accompanied by vegetables.
INGREDIENTS (for 2 people)
- 1 leftover round margherita pizza
- 4 anchovy fillets in oil
- 1 spoon of desalted capers
- Pitted black olives to taste
- Some grilled cherry tomatoes
- Fresh basil or mint leaves for garnish (optional)
- Oregano to taste
Preparation
Place the pizza on a baking sheet lined with parchment paper and sprinkle with dried oregano. Bake at 160°C (325°F) for 3 minutes. Then remove from the oven.
– Arrange the well-drained anchovy fillets in oil on half of the pizza.
– Sprinkle the desalted capers over it.
– Add the pitted and halved olives.
– Fold it like a wallet.
– Garnish the surface with grilled cherry tomatoes and whole pitted black olives, securing with toothpicks.
– Place in a preheated oven at 160 degrees and cook for a few minutes (5 or 6). Then remove from the oven.
Cut the pizza in half to create two triangles. Garnish with fresh herb leaves and serve. Now you can enjoy your delicious recycled pizza sandwiches.
