Sweet cake with leftover bread

And it can also bring you great satisfaction in the kitchen, for example by making a cake, sweet or savory, with leftover bread that would otherwise end up in the garbage can.

SWEET CAKE WITH LEFTOVER BREAD

Let's see how to use up leftover bread in a delicious way with the bread cake recipe by Rosita Ghidini Bosco, author of "Mamma che buono" (Vallardi Editore).

Ingredients

(For 6 people)

  • 250g of stale white or wholemeal bread
  • 500 gr of milk
  • 125 g sugar
  • 50 gr of sultanas
  • 50g dry Marsala, or another liqueur of the same alcohol content (if you're making it for children, you can use milk)
  • 12 grams of cocoa powder
  • 2 small eggs
  • Chopped almonds (according to your taste)

Preparation

  1. Let's cut the bread into pieces and leave it to soak in the milk in the refrigerator overnight.
  2. In another container, place the raisins in the Marsala and leave them to macerate overnight.
  3. The next day we take the mixture of milk and bread and blend it until you get a cream smooth and homogeneous.
  4. Add, with a whisk, the sugar, the cocoa that we will have previously sifted, the eggs and the raisins with any unabsorbed Marsala and finally also the chopped almonds.
  5. Place the dough in the buttered and floured cake pan, forming a layer about 2 cm high.
  6. Bake in a preheated oven at 180 degrees for about 45 minutes.
  7. SOME USEFUL TIPS

    • Rinse raisins or any dried fruit well before soaking them;
    • To make sure that the cocoa to avoid lumps forming inside the mixture, sift it into a small portion of the mixture and then add it to the rest;

    To make your bread cake even more delicious, sprinkle it with some cream mounted. Stick the chopped dried fruit to the sides as desired and then complete the decoration of your cake with some fruit salad or lots of cute chocolate curls.
