A really tasty appetizer i marinated zucchini rolls, filled with avocado e ricotta cheeseIdeal for an aperitif at home, on the terrace, in the company of friends, and a perfect dish also as a side dish accompanied by an excellent prosecco.
Ingredients for 5 people)
- 4 zucchini
- 1 small avocado
- 2 untreated lemons
- 250 g of cow's milk ricotta
- 1 tablespoon of salted capers
- 3-4 tablespoons of chopped pistachios

Preparation
- work Add the ricotta, rinsed and chopped capers, the zest of 1 lemon, salt, pepper, and a drizzle of olive oil. Mix well and refrigerate.
- Wash and trim Slice the zucchini lengthwise and let them marinate for about half an hour with a couple of tablespoons of oil, the juice of 1 lemon, thyme, and a pinch of salt. Then drain and stack them to create longer ribbons.
- Spread a teaspoon of cream on each strip.
- Cut Slice the avocado, cut it into 1,5 cm sticks, and roll them in the pistachios. Place one on each zucchini strip and roll it up.
