Zucchini rolls with ricotta and avocado

Delicious and fragrant thanks to the lemons among their ingredients, they're also perfect as a side dish. Pair them with a glass of excellent prosecco.

Ingredients for 5 people)

  •  4 zucchini
  •  1 small avocado
  •  2 untreated lemons
  • 250 g of cow's milk ricotta
  • 1 tablespoon of salted capers
  •  3-4 tablespoons of chopped pistachios
  •  Timo
  •  Extra virgin olive oil,
  •  Salt and pepper

Preparation

  1. work Add the ricotta, rinsed and chopped capers, the zest of 1 lemon, salt, pepper, and a drizzle of olive oil. Mix well and refrigerate.
  2. Wash and trim Slice the zucchini lengthwise and let them marinate for about half an hour with a couple of tablespoons of oil, the juice of 1 lemon, thyme, and a pinch of salt. Then drain and stack them to create longer ribbons.
  3. Spread a teaspoon of cream on each strip.
  4. Cut Slice the avocado, cut it into 1,5 cm sticks, and roll them in the pistachios. Place one on each zucchini strip and roll it up.
