How to prepare fennel and orange salad

The combination is perfect for its freshness, authenticity, and flavor: fennel salad with oranges is made with this simple and quick original Sicilian recipe. You can add other ingredients of your choice to the basic recipe: black olives “cunzate” (i.e. seasoned), red onions (possibly Tropea), radicchio, spinach. 

Ingredients

(For 4 people)

  • 2 fennel
  • 2 oranges
  • salt and pepper
  • 2 tablespoons of olive oil

Preparation

  • Wash and dry the fennel, keeping the outer part as well.
  • Cut off the tips and then slice thinly.
  • Peel an orange and separate the segments.
  • In a bowl, combine the orange segments and thinly sliced ​​fennel and then season with 2 tablespoons of extra virgin olive oil, salt and pepper.
  • You can add black olives, walnuts, raw spinach, chicory, sliced ​​onions, lettuce, capers and whatever ingredients your imagination suggests.
