 INGREDIENTS

  • 320g of spaghetti
  • 8 salted anchovies
  • 100 g of stale breadcrumbs
  • 2 cloves of garlic
  • 1 hot pepper
  • 1 dl of dry white wine
  • Extra virgin olive oil
  • Sale
  • Pepe

Preparation

  • Heat five tablespoons of oil in a pan and brown the garlic, peeled and whole: remove it as soon as it turns golden;
  • add the crumbled chili pepper and the desalted and boned anchovies, crushing them with a fork to dissolve them;
  • moisten everything with wine and cook the anchovies over very low heat until they are reduced to a paste;
  • in the meantime crumble the breadcrumbs bread and brown it in a pan with five tablespoons of oil;
  • cook the spaghetti, draining them al dente and then season them immediately with the breadcrumbs;
  • add the anchovy sauce, mix well, pepper and serve.
