How to prepare pasta with agretti
Ingredients (for 2 people)
- 200 g. of spaghetti
- 200 g of boiled agretti
- 1 large fresh spring onion
- 8 sprigs of Thyme;
- 2 tablespoons of extra virgin olive oil
- red salt to taste
Preparation
– Pour the extra virgin olive oil into a non-stick pan and add the peeled and thinly sliced spring onion.
Brown the spring onion over low heat, stirring occasionally to prevent it from burning. Meanwhile, bring the reserved agretti cooking water to a boil.

– Finally, add the boiled agretti and let them cook for a few minutes, stirring often or simply shaking the pan.
– Plunge the spaghetti into boiling water and cook until al dente.
Continue cooking the agretti until the spaghetti is al dente, adding a couple of tablespoons of the pasta cooking water every now and then. Drain the spaghetti and add it to the agretti in the pan.
– Mix them together with the vegetables, keeping the heat low.
– Turn off the heat, divide the spaghetti with agretti between two individual plates and serve immediately. Enjoy your meal.
