How to make fake pizza with leftover dough

One of the easiest, quickest, and tastiest ways to use up leftover pasta and avoid wasting it is to cook it as a "fake pizza," following this recipe.

Ingredients

  • 200g of boiled pasta
  • 100g mozzarella (or provola)
  • Extra virgin olive oil
  • 2 ripe tomatoes
  • Basil
  • 4 anchovy fillets in oil (optional)
  • 1 bunch of arugula (optional)
  • 20g grated Parmesan cheese
  • 6 eggs
  • Salt and pepper

Preparation

  • Put the pasta leftover boiled meat in a bowl and season it with parmesan cheese, a little pepper and chopped basil.
  • Shelled inside the eggs, mix everything together and pour the pasta into a baking dish greased with a little olive oil.
  • Level well and then season the “fake pizza” with a layer of mozzarella slices, tomatoes washed and cut into pieces (salt them lightly) and the anchovies.
  • Proceed with cooking in a preheated oven at 220 ° for 10 minutes, then take out of the oven, decorate with rocket (if you decide to use it).
  • All you have to do is serve the hot pizza in slices.

This preparation lends itself to various modifications: on the surface you can indulge yourself with the ingredients you like most, like on a classic pizza. Also excellent as a “empty fridge” recipe, for cured meats, cheeses or leftover vegetables.
