Baking powder: the recipe with bicarbonate of soda

Combine with vinegar or lemon juice. Or with yogurt.

Baking soda is one of those products our grandmothers couldn't live without due to its incredible versatility. Very inexpensive, excellent, and effective as a natural household cleaner instead of common detergents , baking soda is also an ideal ingredient for making cakes, biscuits, shortcrust pastry , and other sweet and savory recipes. Just a pinch of this special white powder can make baked goods more fragrant, reduce the acidity of tomatoes, and eliminate the bitterness of certain vegetables like chicory or broccoli. But that's not all: did you know that baking soda is also a valid alternative to store-bought yeast? Sometimes you want to bake a cake and realize at the last minute that you don't have any yeast at home. In this case, you can easily substitute it with baking soda. To learn how, Stefania Rossini comes to us once again and reveals how to use baking soda as an ingredient to make excellent homemade yeast :

  • Mix together 1/4 teaspoon of baking soda, 1/2 teaspoon of vinegar or lemon juice, or 100 grams of milk.
  • Alternatively, pour 1/4 teaspoon of baking soda and 125 g of yogurt into a bowl, mix everything together and your homemade cake leavening agent is ready.

Baking soda itself isn't a leavening agent like baking powder, but it can help the dough rise. To do this, however, it must be mixed with another acidic ingredient, such as vinegar, lemon juice, milk, or yogurt.

An advice

Since it is a homemade product and therefore without preservatives, it is best to consume the yeast quickly.
