BAGUETTE RECIPE

Ingredients
(for 10 baguettes)
- 600 grams of spelled flour
- 250 ml of water
- 200 g of sourdough starter
- 5 gr of salt
- 1 teaspoon of honey
Preparation
- Mix il yeast with the water in a bowl and add the honey. Add the flour and continue kneading.
- Transfer the dough Turn the dough out onto a floured surface and knead for 8-10 minutes. Shape into a ball and place in a bowl. Let rise for at least 4-5 hours.
- Transfer it to the work surface, add the salt dissolved in a little warm water and knead again.
- Divide the dough Divide the dough into 10 equal loaves. Roll them with your hands to shape them into baguettes. Then, let the baguettes rest on a cloth folded like a fan (to keep them spaced apart), covered with another cloth, for at least 6 hours.
- Heat the oven at 200°C. Transfer the baguettes to a baking sheet and make 3 diagonal cuts on each one using a knife. Bake for at least 10 minutes, then lower the oven temperature to 180°C and continue baking for another 30-40 minutes.
