CREAM ENGLISH RECIPE

Irresistible, the English cream is a pudding It's quick and easy to make with just a few ingredients. While it's perfect for serving with fresh fruit in the summer, in the winter, especially during the Christmas holidays, it's the perfect accompaniment to classic desserts like Pandoro e Panettone. A different way of serving the Christmas sweets is in fact to cut them into slices, heat them slightly in the oven and serve them with the custard poured on top.

Lemon Creme Anglaise Recipe

You can also prepare custard at the last minute, to satisfy a sudden craving for dessert or to give a new look to classic Christmas desserts:

Ingredients

  • 500 ml of fresh milk (choose whole milk for a more intense flavour)
  • 6 egg yolks (about 125 g)
  • zest of one unwaxed lemon
  • 1 vanilla bean (or a sachet of vanilla extract)
  • 125 grams of sugar
  • A pinch of salt

PREPARATION

  • Pour the milk in a saucepan, add the seeds of the berry vanilla and the vanilla pod itself (or the contents of the vanilla sachet) and the lemon zest (cleaned without the white pith, which has a bitter taste), mix and place on the stove over low heat. Bring to a boil and then turn off the heat.
  • In a bowl, shelled Beat the eggs, collecting the yolks, then gradually add the sugar, whisking well and adding a pinch of salt. Continue beating until smooth. Pour the hot milk slowly into the egg and sugar mixture. Cook the cream in a bain-marie over low heat, stirring constantly.

ORANGE CREAMS RECIPE

A delicious variation of the classic recipe is the one with the scent of orange: will allow you to use the fruit par excellence of the cold season.

INGREDIENTS

  • 400 ml of milk
  • 4 yolks
  • 4 tablespoons sugar
  • 2 oranges

PREPARATION

  • Wash them oranges and remove the peel (avoiding the white part), in a small saucepan heat the milk with the peels.
  • In a heavy-bottomed saucepan, you work Whisk together the sugar and egg yolks until frothy, then add the hot milk (remove the peels), and the juice of the two oranges (optional). Stir with a whisk and place over low heat. Stir constantly until thickened.
  • Turn off the flameCover with cling film, touching the cream, and let it cool. Serve the custard on slices of warm pandoro or panettone, garnished with dark chocolate shavings and almonds, if you like.
