DUCHESS POTATO RECIPE –

To prepare this recipe you need to boil the potatoes and have a piping bag, a pastry bag to place the mixture in.

Ingredients

  • 500g of boiled potatoes
  • 2 egg yolks
  • 50 g butter
  • 100g grated Parmesan cheese
  • nutmeg
  • Salt and pepper (to taste)

Preparation

  • Wash, dry, and peel the potatoes. Boil them, then mash them with a potato masher until they become a soft, fluffy puree.
  • Add salt and pepper, eggs and room temperature butter.
  • Mix everything together until you obtain a smooth and homogeneous mixture.
  • Line a baking tray with baking paper and preheat the oven to 180°.
  • Place the mixture in the piping bag and pipe little tufts onto the baking tray.
  • Bake for 15 minutes.
