DUCHESS POTATO RECIPE –

DUCHESS POTATO RECIPE –
To prepare this recipe you need to boil the potatoes and have a piping bag, a pastry bag to place the mixture in.
Ingredients
- 500g of boiled potatoes
- 2 egg yolks
- 50 g butter
- 100g grated Parmesan cheese
- nutmeg
- Salt and pepper (to taste)
Preparation
- Wash, dry, and peel the potatoes. Boil them, then mash them with a potato masher until they become a soft, fluffy puree.
- Add salt and pepper, eggs and room temperature butter.
- Mix everything together until you obtain a smooth and homogeneous mixture.
- Line a baking tray with baking paper and preheat the oven to 180°.
- Place the mixture in the piping bag and pipe little tufts onto the baking tray.
- Bake for 15 minutes.
