  • 10-12 slices of leftover bread
  • 1 small onion
  • 1 clove of garlic
  • Leftover minestrone
  • 1 liter of tomato sauce
  • 4-5 mozzarella balls
  • Extra virgin olive oil

Preparation

  • After having finely sliced ​​the onion, brown it together with the garlic clove, add the tomato puree, salt, mix and leave to cook with the lid on for about 20 minutes.
  • Meanwhile, cut the bread into slices that are not too thin. Reduce the mozzarella cheese in cubes. .
  • Transform the minestrone into a cream using a food mill and dilute it a lot with water to obtain a vegetable broth.
